HOW TO MAKE WATER KEFIR
WHAT YOU'LL NEED TO MAKE WATER KEFIR
SUPPLIES
-
a glass container
-
a spoon
-
a cover for the jar such as towel, cotton cloth
-
a rubber band
-
a strainer
-
a bowl
INGREDIENTS (To Make 750ml Water Kefir)

750ml filtered / dechlorinated water
-
3 to 4 tablespoon cane sugar
(Ratio: 1 tablespoon of sugar to 1 tablespoon kefir grains to 250ml water)
INSTRUCTIONS FOR MAKING WATER KEFIR

Prepare, dissolve 3 - 4 table spoon sugar in 750 ml water.
(cold, cool or room temperature water is fine, too hot temperature will kill all the good stuffs in the kefir grains) -
Transfer water kefir grains into sugar water.

Cover container with your choice cloth, secure with rubber band.

Culture, place the container on counter top for 24 - 48 hours to culture.

Taste, when the water becomes cloudier, lightly sweet and taste pleasant to you, your water kefir is ready.

Separate kefir grains from finished water kefir with strainer.

Repeat, transfer kefir grains into new batch of sugar water.

Drink, do a second ferment to add flavor or store finished water kefir in the fridge.
STEP 1:
Add 3 - 4 tablespoon of sugar into 750 ml of water. Stir to dissolve. If using warm or hot water allow to cool down.

STEP 2:
Transfer 3 - 4 tablespoon of live water kefir grains into brewing vessel filled with pre-mixed sugar water.

STEP 3:
Cover container with a cloth and secure with a rubber band. Let sit for 24 - 48 hours to culture / ferment in room temperature, away from sunlight.

STEP 4:
After 24 - 48 hours, culturing is complete. Signs of fermentation are the appearance of small bubbles in the jar and the liquid becomes cloudy and less sweet, as the kefir grains would have consumed most of the sugar.

STEP 5:
Separate kefir grains from finished water kefir. Place jar/bowl under strainer to catch kefir grains in strainer and finished water kefir under.

STEP 6:
Repeat Step 1 - 5. Transfer kefir grains that was strained out earlier into glass jar, add sugar water and allow to culture again. You can make a fresh batch of water kefir roughly every 24 - 48 hours.

STEP 7:
Drink, flavor, do a second fermentation or store finished water kefir in fridge up to 2 weeks.
